14Matera is an incredible city to visit in Italy especially if you stay at one of the luxury cave hotels carved right into the stone. It’s located just outside Puglia region in Southern Italy. We took a speed train from Florence to Salerno then drove to Matera. Scroll through to get a sense of this magical place ✨
wt helly Toronto?! more steamy than Italy!🌡️ when the humidex is humidex-ing, take your afternoon coffee in the form of cool, refreshing Coffee Jelly! this simple treat pairs rich, bitter notes of coffee with chilled sweetened cream. enjoy on its own or with a scoop of vanilla ice cream on top recipe includes directions using gelatin powder instead of agar. recipe on saltnpepperhere.com ☕️
walking through Matera feels like stepping back thousands of years. it is one of the oldest settlements in the world and you can feel it in every stone, see beauty in every corner. the ancient Sassi cave dwellings glow gold at sunset and is pure magic ✨ this was one of the most memorable parts of our Italy trip. definitely worth the drive off the beaten path. we had a lovely stay at Aquatio Cave Luxury Hotel & Spa with well air conditioned rooms which is an important consideration as cave dwellings can be damp. 📍Matera, Italy #matera #italy #southitaly #italytravel #aquatiocaveluxuryhotel
As highly requested! A gluten free / dairy free version of the Japanese curry. I make this version often too and I especially love the dark chocolate addition for added richness in lieu of the butter roux. I added directions and ingredients for this alternate preparation in the recipe. find it on the site ⇣ www.saltnpepperhere.com/blog/japanese-curry-udon
Homemade Japanese roux blocks need only 3 ingredients. Why go to the effort of making a homemade meal just to add those additives-laden store bought curry blocks 😭 I learned to make homemade curry roux from @justonecookbook so many years ago and never bought them again! Ingredients 4x batch of curry roux: * 1.5 sticks (168g) unsalted butter * 1¼ C (168g) all-purpose flour * ½ C (48g) S&B curry powder My Japanese udon recipe⇣ www.saltnpepperhere.com/blog/japanese-curry-udon
This Japanese curry udon (kare udon) is consistently a top 10 recipe on my site! Readers love that it’s healthier using a simple homemade Japanese curry roux. And say the honey and dark chocolate additions make the flavours sing. I agree! 🤩 www.saltnpepperhere.com/blog/japanese-curry-udon Tips and FAQs are on the site too if you have any questions about ingredients etc 📝

the Michelin one had an interesting corn sabayon. But he still preferred mine and it’s because ultimately a pavlova doesn’t need overthinking to be absolutely divine - a little cream, a little fruit, maybe something nutty/crunchy (or not). that’s why I think it’s a great dessert to make yourself! and order something else for dessert 😉 the recipe makes 10 mini pavlovas. www.saltnpepperhere.com/blog/mini-pavlovas

Frozen pierogi are clutch when there’s barely time to make dinner but don’t follow the package instructions 🚫🙅🏻‍♀️ Do this instead (~10 mins total time)⇣ - place non stick skillet on medium heat - while it warms, add a thin coat of oil and arrange pierogi flat-side down - add 1/2 cup of water (a little less if cooking fewer) - cover to cook until water boils then evaporates, then uncover to continue until bottoms are crisp and golden brown I usually boil a pack of organic broccoli florets at the same time. Pretty decent meal for 10 minutes of time! . 。 PS .・✫・゜・。. 。 WEEKNIGHT HEROS e-BOOK $10 ⊳ 10 tried, tested and true recipes — 4 exclusive plus 6 blog faves in one place ⊳ I personally make at least one recipe from it every week👩‍🍳 ⊳ peep my last video for Butter Shoyu Clam Linguini recipe developed exclusively for the e-Book 🤌 ⊳ available to buy at the link in my bio *°:⋆

Kale pasta adapted from The River Cafe. added a squeeze of lemon afterwards and served with pan-fried Toulouse sausages. I would 100% also use this kale sauce on pizza, in lasagna, with eggs, etc. etc. 2 bunches (450g) lacinato kale, ribs removed 2 small garlic cloves, smashed 1/2 cup (120ml) evoo (a nice one!), plus more to serve 500g rigatoni or pasta of choice Lots of grated Parmigiano Reggiano Lemon for finish s&p Boil kale in well-salted water until tender ~7 mins. Using tongs, transfer kale to food processor along with raw garlic cloves (raw bc I like the bite) and blend into a smooth purée, drizzling olive oil while blending. Taste and season really well with s&p. In the same pot of water, cook pasta to al dente less 2 minutes. Keep 1 cup of cooking water and drain pasta. Return pasta to pot. Add kale sauce, a handful of grated Parmigiano Reggiano and generous splashes of cooking water. Toss and cook 2 minutes until sauce is emulsified. Serve with more grated cheese, drizzle of evoo, plus a squeeze of lemon. use quality ingredients when there are so few because it really makes a difference! recipe IB The River Cafe London
mini pavlovas just because my go-to pavlova recipe on the blog - use it to build one large pavlova OR make a bunch of these cute mini ones (I made 10) www.saltnpepperhere.com/blog/strawberries-and-cream-pavlova Tips for making mini: 1) Follow recipe exactly as written but bake at lower temp of 225°F (110°C) for 60-90 minutes, based on these visual cues: • Surface turns matte and dry, not glossy • Edges feel set when lightly touched • Base releases cleanly from parchment • Colour is pale ivory but not golden 2) Dry in turned-off oven ~2 hrs 3) For smaller flatter shapes, aim for the lower end of the time ranges for baking/drying. Larger taller shapes, upper end. 4) Humidity can impact bake and dry times too — higher humidity (or pouring rain) will need longer. Hot Take: You have been lied to. Roasts are not hard. It takes minimal active prep and then passive cooking from there so you can go live your life. Sure this is a showstopper for a dinner party but it’s also a great one for Sunday or WFH weeknight family meal with welcomed leftovers to eat or reinvent into something else (pasta! fried rice! tacos!) My Miso Gochujang Pork Roast first shared in 2017 still remains a fave recipe of mine. You might not expect from miso’s intense umami and gochujang’s spicy pungency, that they mellow into a deeply savoury yet rounded flavour.
