- Tis the season for bone broth 🤧 To get something so nourishing and delicious from mostly things that would otherwise be thrown away is like wizardry, don’t you think?? Why I prefer this OVEN METHOD: ✔︎ Maintaining consistent low heat to extract collagen from the bones without melting it. The temperature-controlled environment of the oven gives peace of mind that I won’t accidentally over boil and melt the collagen. ✔︎ Ideal if you prefer not to leave the stove top on for hours or overnight, especially gas burners. And no need to run the noisy fume hood. It’s the little things 😆 ✔︎ While Instant Pot is faster, the oven gives me more flexibility to deal with the straining / storing when it’s convenient because I can leave it anywhere from 12 to 18 hrs. ✔︎ My @Le Creuset is bigger than my Instant Pot so I can make more each time. - Bacon tomato mascarpone pasta for when I was in no mood to cook. Normally I suggest adding baby spinach or torn-up kale before the pasta goes in but remember I was not in the mood to cook so my family was able to survive with no green veggies on this day 🙃 This is one of 10 recipes in my Weeknight Heroes e-book, linked in bio.
- Stocking the freezer with minced garlic cubes is like self care for future me ☺️🧄 I recently switched to using freezer trays and I really like it. It’s more work upfront but the individual cubes are so neat, and easier to grab and use. I like storing the frozen cubes in a stainless steel or glass container. That day, I also stocked two other things I like to prep and freeze: bacon bits and tomato paste. Do you ingredient prep? What ingredients do you prep for the freezer?

- Japanese strawberry shortcake 🍰❤️ This style of strawberry shortcake is different from American or British versions. Rather than rich and buttery, the cake is light and fluffy. It’s a beautiful cake to make and eat. I slightly adapted @Drive Me Hungry’s recipe. It was so excellent I used it again for a mango version of this cake!

- Chocolate chip pecan oatmeal cookies I nickname these my ‘untrendy cookies’ because that’s what they are — no ingenious flavour combo, another cookie stuffed inside of it, or unusual add-ins. It’s just a very good cookie 😋 INGREDIENTS 1¼ C (165g) all-purpose flour ¾ tsp baking powder ½ tsp baking soda ½ tsp kosher salt (increase to 1 tsp for Diamond Crystal kosher brand) 1¼ C (100g) old fashioned rolled oats ¾ C (75g) chopped pecans 1¼ C (210g) mix of semi/bitter-sweet chocolate chips and chopped dark chocolate bar (I like using about half of each) 1½ stick (170g) unsalted butter, at “cool room temperature” 65°F/18°C (see note 1) 1 C less 2 tbsp (184g) brown sugar, packed 1 large egg 1 tsp vanilla Optional finish: Flakey salt Full recipe and step-by-step on the site: https://www.saltnpepperhere.com/blog/chocolate-chip-pecan-oatmeal-cookies

- I am deep in my granola era and I have zero plans to stop. This batch is loaded with pistachios, coconut chips and dried cherries, tossed in a maple syrup and date sauce. It is genuinely dangerous to have in the house! Eat it by the handful, in a bowl of milk or layered into a yogurt parfait? All three are correct answers. Inspired by Chef Dwight Smith and Chef Michelle Rabin's blueberry yogurt granola parfait on the new season of Milk Masters now on YouTube — which, if you haven't watched yet, is your sign to go do that.
