- Miso Marinade Recipe 200g white miso 80g sake 80g mirin 30g sugar Burn off the alcohol from the sake and mirin, add the sugar and miso and mix until the sugar is fully dissolved. Cool to room temperature and store in the fridge indefinitely. I like to use this for miso cod, miso pork, and vegetables like zucchini and daikon. Marinate for at least 20 minutes and play around with the length of time. For miso cod I would marinate overnight for the best flavor. Miso cod specifically: cook in an oven at 275F for 15-30 minutes depending on the size. Check around the 15 minute mark to feel how firm the fish is. It’s done with it starts to flake a little. Finish under a broiler or use a torch. #misocod #misosauce #misomarinade #easyrecipes #cookingtips #japanesefood

- chicken stock recipe by -m👨🏻🍳 feel free to scale down depending on your home setup. Also, I keep the flavor as neutral as possible for versatility. yields 8 quarts 8lb chicken bones 2lb chicken feet 3 onions, halved 3 large carrots, peeled and halved 5 stalks celery, halved * Cover the chicken bones and feet by 2 inches of water and bring to a boil, skimming frequently * Once it reaches a boil, reduce the heat to very low. You want to hit around 180F or 82C to slowly extract the flavor from the bones and feet. I use a lid slightly smaller than the diameter of my pot to ensure everything is submerged. Cook overnight. * The next day, add the mirepoix (onions, carrots, celery) and bring to a boil, skimming frequently * Reduce the heat to low again and cook for an hour. After an hour, remove the mirepoix and continue cooking the chicken on low (180F/82C) until the total cook time for the chicken reaches 24hrs. * Strain and cool to room temperature/cool in an ice bath and refrigerate. * The next day, remove the fat cap that has formed on the surface. Label and freeze/refrigerate. #chickenstock #homecooking #cookingtips #nycfoodie #cheflife #dayinmylife #chickenrecipe

- Replying to @drew_bell2001 garlic confit is garlic cloves cooked slowly over low heat in oil. Over time, they become super soft and slightly sweet, maintaining their garlic flavor without that harsh bite. In its simplest form you can spread it over toast with some sea salt, but I like to also add it to vinaigrettes and sauces for a little savory kick! -m👨🏻🍳 #garlicconfit #kitchentips #nycfoodie #pantrystaples #cookingtips
