- shredded tofu tacos with chipotle aioli 🌮 i truly can’t get over how flavorful but simple these tacos are! you’d never guess they take just 15 minutes to make. the shredded tofu gets a nice little crisp to it thanks to @chosenfoods avocado oil, which has a neutral taste so the spices can really shine through. it also has a high smoke point so it’s great for using in the air fryer! not to mention it contains great fats from avocados. top the tacos with your desired toppings, but this chipotle aioli is a MUST. y’all already know Chosen Foods’ vegan mayo is my favorite plant based mayo on the market; i love the simple ingredients list and how creamy it is! full recipe below ❤️ and you can use code AVERY for 35% off their site #ChosenPartner ingredients: -1/2 of a high protein tofu block (so 8oz). I highly recommend using high protein/super firm tofu, but extra firm tofu works, too! you just might want to press it to remove some moisture beforehand. -1/2 tbsp Chosen Foods avocado oil -1/2 tbsp soy sauce -1 tsp chili powder -1 tsp smoked paprika -1/2 tsp garlic powder -1/2 tsp onion powder -s & p to taste -2 tbsp salsa -1 tbsp Chosen Foods vegan mayo -1 tsp adobo sauce from canned chipotles in adobo -corn tortillas -optional toppings: white onion, cilantro, lettuce, cheese how to: -remove any excess moisture from tofu by squeezing it and then grate the tofu using a grater. toss in avocado oil, soy sauce, and spices. bake in air fryer or oven for 10-15 mins at 400F or until crispy to your liking -while tofu is baking, prep the chipotle aioli by adding your vegan mayo and chipotle sauce to a small bowl and stirring to combine -also prep any desired toppings like cilantro, onion, lettuce, cheese, tomato. -when tofu is done, remove from oven and add in the salsa. stir everything together and now it’s time to assemble! warm up your corn tortillas before adding in the tofu meat and desired toppings. Enjoy! #lunchideas #lunchtime #15minutemeals #easyrecipe

- the sunday seven is a list of tasks you can do when you want to set yourself up for a productive week ahead but you don’t know where to start. while completing all of the tasks is ideal, the seven are just guidelines and there shouldn’t be a pressure to complete them all. it is about what you CAN do, not about what you CAN’T! having this list will take the guessing game out of “what should I do with the time I have?” so that you can instead spend that time getting stuff done. the sunday seven tasks include: 1. grocery shopping - plan out your key meals and get the food you need for them. 2. food prep - wash produce and prep other key food items so that it saves you time throughout the week. this is way less time intensive than meal prep, but still has a big payoff. 3. laundry - I always do at least one load of laundry on sundays. its an easy task to complete on those days where you want to feel like you accomplished something. 4. clean your space - this doesn’t have to be a super deep clean; at the very least, get rid of clutter so that your space is usable and peaceful. clean home = clean mind. 5. exercise - go on a walk, lift some weights, do your favorite group fitness class - just move your body for the joy of it! 6. wash your sheets - the feeling of getting into a clean bed on a sunday night is truly unmatched. 7. 1-3 hours (or more!) of self-care. it’s so important that we take the time to care for ourselves. grab a book, do a spa day, make your favorite meal, whatever it is, do something for YOU! #sundayreset #sundayseven #resetroutine #dayinmylife #productivevlog
