HannahThese are GOALS for real. If you're like me, you have tried countless recipes, tips, and tricks to achieve perfect sugar cookies that have a clean edge and hold their shape. After much trial and error, I've determined that it's less about the recipe and more about the methods you use. I have put together a list of my non-negotiables when making sugar cookies that have helped me so much, and now hopefully they'll help you! ▫️Use cold butter! My butter goes straight from the fridge and into my mixing bowl (after I chop it up into cubes) to be creamed with the sugar. Creaming cold butter and sugar together incorporates less air into the mixture, which leads to less spreading when baked. ▫️Don't over cream your butter and sugar! As mentioned above, when you cream together butter and sugar, air is introduced. Your goal is to introduce as little air as possible. I typically cream my butter and sugar together until it has just started lightening in color, about 3 minutes. ▫️Double freeze your dough! After I make my dough, I roll it out to my desired thickness and freeze the roll outs. When it's time to bake, I cut out my shapes from the slightly thawed frozen dough, and pop the tray in the freezer for several minutes (around 10) before it goes straight into the oven. This helps prevent spreading because the frozen butter melts slower than room temp butter, allowing those crisp edges to set and hold everything together. ▫️Avoid using hot sheet pans! This is probably common sense, but try not to put frozen cutouts onto a tray that recently left the oven and is still warm to the touch. That residual heat will start melting the butter you have worked so hard to keep cold, and potentially cause spreading. Allow empty sheet pans to come fully to room temperature, or do what I do and throw them in the freezer for a few minutes! Let me know if you found this list helpful, and if any of these methods made a difference in your sugar cookies.
