Dean EdwardsNow that the weather has started to turn it’s starting to feel like comfort food is creeping back in, not long before slow cooker season kicks in 🤣 if you are looking for a cosy new dish, this tray bake is a banger! Marry Me Pasta Bake (serves 4) 1 onion finely diced 1 tbsp. garlic paste 1 tbsp. tomato puree 100g sundried tomatoes chopped 1 tbsp. dried oregano 1 tsp. paprika ½ tsp. chilli flakes 800ml boiling chicken stock 350g Rigatoni pasta 400g skinless chicken thighs cut into bite sized pieces 80ml double cream 70g grated parmesan cheese Handful fresh basil torn Method: 1: Take a large bowl then add into it the onion, garlic, tomato purée, sun-dried tomatoes, herbs and spices and the boiling chicken stock. Add some salt then mix well. 2: Place the pasta and chicken into a deep baking dish then pour over the liquid and stir until well combined. Add a good pinch of salt and pepper then pop into a pre-heated oven set to 180c / gas mark 4 for 35 minutes, stir the pasta half way through. Once cooked stir through the cream, then scatter over the cheese and return to the oven for a further 5 minutes. Finally tear over the fresh basil. #Pasta #traybake #comfortfood #pastabake
