Dean EdwardsA true curry on the coals! This chicken tikka bhuna is so good! Of course use this recipe if you want to cook on the hob, it will still be banging. As always, you can find the full recipe below 🌶️🔥👇🏼👏🏼🙌🏼❤️ BBQ Chicken Tikka Bhuna 600g boneless and skinless chicken thighs cut into bite size pieces 1 tbsp. garlic and ginger paste 1 tbsp. garam masala 1 tsp. turmeric 1 tsp. amchoor powder (dried mango) ½ tsp. dried fenugreek 1 tbsp. mint sauce 1 tbsp. mango chutney ¼ tsp. red food colouring (optional) 60ml natural yoghurt 50ml oil 30g ghee 1 onion large diced 1 tbsp. garlic and ginger paste 2 fresh tomatoes diced 1 tbsp. mix curry powder 1 tsp. garam masala 1 tbsp. tomato puree 200ml boiling water 1 x 300g portion of curry base gravy 1 chilli sliced lengthways Fresh coriander to garnish Method: 1: Marinade the chicken in a bowl, along with rest of the Tikka ingredients and some salt. For best results, leave to stand in the fridge overnight if you have time, but if not, these are good to go. Thread onto skewers. 2: Set up the BBQ for direct cooking. 3: Cook the chicken tikka over the charcoal turning a few times until you have some nice caramelisation, you don’t need to fully cook the chicken through at this point as it will finish cooking within the sauce. 4: Place a wok or pan over the charcoal then fry the onion, garlic and ginger paste in the oil and ghee along with some salt, this will take around 5 minutes. Add in fresh tomato and spices then cook for a further 2 minutes. Pour the tomato purée which has been mixed with the boiling water, then the curry base gravy then bring up to a simmer. Add in the cooked chicken tikka and chilli then simmer for 5 minutes until the chicken is cooked through and the sauce has thickened. Finally scatter in some chopped coriander. #fakeaway #indianfood #BBQ #chickentikka #chickenbhuna
