Angelo CoassinEASY LEMON COOKIES 🍋😍 Ingredients: -1 lemon scraps -200g sugar -85g olive oil -280g all purpose flour -1 tsp baking powder -pinch of salt Optional: -2 eggs (or 1 egg and 60ml lemon juice) Here you have two options: if you want a shortbread version, just mix your boiled lemon with sugar, oil and flour; if you want to make some chewy lemon cookies, then add 2 eggs in the mixture (for a stronger lemon taste, replace one egg with 60ml lemon juice and thank me later) 😋 Boil our lemon scraps for 15 mins then mix them with sugar and oil (if you want to add the 2 eggs or 1 egg and 60ml lemon juice, please do it now). Add flour in, baking powder and a pinch of salt, form some cookies, roll them in some icing sugar and bake for 15-20 mins (180C/360F) or until golden.
