Anyday CookwareSpice up your next lunch with these Buffalo Chicken Lettuce Cups! 🥬🔥They're quick, delicious, and the perfect way to keep your summer bod on track. 💪🏼 Recipe: 1. Add tomato paste, hot sauce, beer, rice vinegar, chipotle, brown sugar, and minced garlic into a Large Shallow Anyday dish and stir. 2. Add chopped celery and onions to the mix and stir again 3. Place chicken thighs into the mixture and ensure each thigh is coated well. 4. Microwave with the lid’s knob lifted on half-power (PL 4 or 5) for about 10 minutes. Check the chicken’s progress and (if needed) continue microwaving in 2-minute intervals until tender/easily shreddable. 5. Once done, remove the chicken and shred. Blend the extra sauce in the dish until smooth and drizzle back into the shredded chicken. 6. Spoon into large butter lettuce leaves, then top with crumbled blue cheese and chives (if desired).
