K&T HamilyEasy Lemon Cake Recipe 🍋 Cake Ingredients: - 1 whole lemon - ¾ cup + 2 tablespoons granulated sugar - 1 teaspoon vanilla extract - Pinch of salt - ¼ cup vegetable oil - 3 tablespoons + 1 teaspoon milk - 3 large eggs - 2 cups all-purpose flour - 2½ teaspoons baking powder Glaze: - 2 tablespoons powdered sugar - 1 tablespoon fresh lemon juice Baking Instructions: 1. Bring a pot of water to a boil and boil the whole lemon for 5 minutes 2. Remove the lemon, let it cool slightly, then cut it into pieces and remove all the seeds 3. Add the lemon pieces, sugar, vanilla extract, salt, eggs, milk, and vegetable oil to a blender 4. Blend until completely smooth 5. Pour the mixture into a large bowl and mix in the flour and baking powder until just combined 6. Pour the batter into a 9x5-inch loaf pan that has been buttered 7. Bake at 325°F for 55–65 minutes, or until a toothpick inserted in the center comes out clean 8. Let the cake cool completely before glazing 9.
