Jasmine & MusashiI recently spent a day staging at Huso, a Michelin-starred restaurant in NYC led by chefs Buddha Lo and Lois Picken. For those unfamiliar, a stage is essentially a short internship where you get to work alongside a restaurant's kitchen team. Whether you're looking for a job or simply hoping to learn something new, here are my three biggest tips for a successful stage: 1. Ask questions: Every kitchen operates differently, so establish where things belong, what's expected of you, and who to report to. Asking questions early prevents unnecessary confusion later. 2. Pay attention to everything around you: Observe how cooks organize their stations, move through the kitchen, and communicate with one another. Some of the most valuable things you'll learn aren't explicitly taught. 3. Prioritize precision over speed: Follow instructions carefully and replicate what's demonstrated, even if you're used to doing things differently. You're there to learn their standards, not introduce your own. Speed will come with practice! A big thank you to the entire Huso team for welcoming me into your kitchen. If you have any questions about staging, leave them below!-m๐จ๐ปโ๐ณ #restaurantlife #staging #kitchenlife #nycrestaurants #finedining
