Jasmine & Musashikey is to add broth like youre making risotto!!! recipe below and in our b1o :) RECIPE Ingredients - 1 Pack of chicken drumsticks (approx 6) - 3 Onions - 1 Bulb garlic and 3 cloves - Salt - White pepper - Ginger (approx 3 three inch nubs) - 200g Haiga rice or other short grained rice - 20g Sweet glutinous rice - 1 Bunch scallion - @yondu.usa - Soy Sauce (for final plating) - Sesame Oil (for final plating) - Toasted Sesame Seeds (for final plating) 1. Make the chicken broth. Blanch drumsticks for about 10 seconds to get rid of impurities and then put back in cold water with 2 roughly cut onions and 1 head of garlic cut in half. Simmer for 1 hour, skimming frequently. Strain and save drumsticks for later. 2. In a clean pot sweat 1 onion diced and 3 cloves garlic sliced in some canola oil. Season with salt and white pepper and cook until translucent, about 5 minutes. Add your chicken broth and sliced ginger (you can leave the skin). Simmer for 30 min. 3. Meanwhile prep your rice. Add Haiga rice and glutinous rice in a bowl to rinse rice (you still want to do this!). We cook our rice in a donabe so add the rice mixture with 350g of water. Cook for 18-20 minutes. 4. Shred drumstick meat off the bone. Save the bones for later. 5. After 30 mins, turn off the heat for the broth and add rough chopped scallion and drumstick bone to the broth. Steep scallion in broth off heat for 25 minutes. Strain broth and set aside. 6. Add overcooked rice to an empty pot. You’ll add the broth in like a risotto (gradually). Cover the rice with first batch of broth, stir continuously until thickened, and keep adding broth slowly. After all broth is added, add in shredded chicken. You want to keep stirring, that’s key, because that’s what will release starch and make it thick. Season with salt, white pepper, and yondu to taste. 7. Plate! We heated some leftover chicken jus (that’s totally optional) and top with soy sauce, sesame oil, sesame seeds and scallions. Happy cooking!! #chickensouprecipe #jook #juk #souprecipe #homemadesoup #comfortfood #dinnerideas #nycfoodie
