juliusfiedlerSyria’s way to make pasta Full recipe below. This one was crazy! The name of the dish translates to “burnt fingers”, because it’s so delicious you can’t resist tasting it with your bare hands when it’s still piping hot. Btw, you don’t have to make the “pasta” from scratch. Nowadays, it’s common to use broken pieces of fettuccine in the stew and fried pieces of flatbreads as the garnish for a quicker version. RECIPE 👇 For the dough * 1½ cups plain flour * 1 cup water * 8g salt For the stew * 1 cup brown lentils * 4 cups water * ½ onion, chopped * ¼ cup olive oil * ¼ cup pomegranate molasses * ¼ cup hosrom (sour grape juice), optional * Juice of 2 lemons * Salt and pepper * Half the dough, cut into small pieces For the greens * 4 cups chopped coriander * 5–7 garlic cloves, minced * ¼ cup olive oil * Salt For the toppings * 2½ medium yellow onions, thinly sliced * Vegetable oil, for deep frying * The other half of the dough * Pomegranate seeds * Reserved coriander and garlic greens Method 1. Make the dough by kneading the flour, water and salt until smooth. Rest for 30 minutes, then roll out very thinly. Cut into small diamonds or rounds, dusting with flour to prevent sticking. Set half aside for the stew. 2. Deep fry the remaining dough until puffed, golden and crisp. Drain, then fry the sliced onions in the same oil until golden. Drain both on a rack. 3. Sauté the chopped onion in olive oil with a pinch of salt. Add the washed lentils, stir briefly, then pour in the water. Simmer for around 30 minutes, until tender. 4. Meanwhile, gently sauté the garlic in olive oil over low heat. Add the coriander, then immediately remove from the heat. Set aside. 5. Gradually stir the raw dough pieces into the lentils and cook for 15–20 minutes, until tender. Add the lemon juice, hosrom and pomegranate molasses, then season with salt and pepper. Stir through half the coriander mixture. 6. Serve hot or cold, topped with the fried dough, crispy onions, pomegranate seeds and the remaining greens. #harakosbao #syrianfood #pasta
