avery laurenRECIPE DETAILS BELOW! i'm so excited to be celebrating Earth Day with my friends over at Bright Farms by making this summer berry salad with tempeh bacon, using their iconic Sunny Crunch lettuce! packing my lunch using reusable containers and making my own dressings instead of buying them in stores are just a few of the ways I try to reduce waste and show our Earth some much needed love. @brightfarms makes the freshest, crispiest, locally grown lettuce and it adds the perfect crunch to this dish. recipe details below! salad: @BrightFarms Sunny Crunch lettuce blueberries strawberries pecans (or almonds, walnuts, hazelnuts) red onion vegan feta (or cheese of choice) tempeh bacon (recipe below) dressing: 1 tbsp olive oil 1 tbsp balsamic vinegar 1 tsp maple syrup or honey 1 tsp dijon mustard 1 small garlic clove, minced tempeh bacon: 8 oz block of tempeh 1/4 cup soy sauce 1 tbsp tomato paste 1 tbsp maple syrup 1 tsp smoked paprika 1 tsp avocado oil (slice the tempeh into thin even strips. combine all remaining ingredients in a shallow dish and marinate tempeh slices for 10-30 minutes. warm up a pan over medium/high heat and add the tempeh slices, cooking each side until lightly golden and the marinade caramelizes. brush the remaining marinade onto the tempeh slices once you remove them from the pan to keep them moist) #saladrecipe #salad #brightfarmspartner #earthdayeverydaywithbrightfarms #vegan #saladsoftiktok
