avery laureni have shown this recipe so many times on my feed but its for a good reason – it is so easy to throw together, it is a perfect dish to meal prep and lasts well in the fridge, its versatile in how it can be used (sandwich, salad, as a dip, etc), the chickpeas give a great boost of protein, and its just really, really delicious. i have this as a 15 minute lunch all the time and don’t even measure things out at this point because its kind of a foolproof recipe! hope you try it out 🥰 full recipe: -1 15oz can chickpeas, drained and rinsed -2 tbsp dairy free unsweetened yogurt -2 tsp olive oil -1 tsp maple syrup -1 tsp dijon mustard -lemon juice to taste -1/2 tsp dried dill (do this to your preference) -1/2 tsp garlic powder -pinch of paprika (to taste) -salt & pepper to taste -1/4 cup diced red onion -1/2 cup diced celery -optional: 1-3 tbsp hemp seeds for more protein drain and rinse your chickpeas. remove the skins, if desired, and then mash the chickpeas lightly. chop your veggies (red onion and celery) and mix those in with the chickpeas. add all remaining ingredients and taste and adjust as needed by adding more seasonings or acidity. serve as desired either on a sandwich, a bed of greens, with crackers or any other ideas you can think of! leftovers will last a few days in the fridge. #lunch #lunchideas #lunchrecipe #15minutemeals #easyrecipe #sandwich
