Justine Antoineyou better cook 😍 delicioussss, full of prot You need (1 serving) For the steak marinade: * 1 rump steak (about 180–200g) * 1 tbsp olive oil * 1 tbsp red wine vinegar * 1 tsp paprika * 1 tsp dried oregano * 1 clove garlic, minced (or ½ tsp garlic powder) * Salt & black pepper to taste * Small knob of butter (optional, for basting) For the chimichurri sauce (makes 2–3 servings): * 3 tbsp olive oil * 1 tbsp red wine vinegar * 2 garlic cloves, finely chopped * Handful of fresh parsley, finely chopped * Handful of fresh coriander, finely chopped * ½ red chili, finely chopped * Salt & black pepper For the sides: * 1 medium sweet potato * 100–120g green beans (pre-cooked or steamed) * Olive oil, salt & pepper Prep 1. Sweet potato: Cut the sweet potato in half (keep the skin on), drizzle with olive oil, add salt and pepper. Preheat the air fryer to 190°C (375°F) and cook for about 45 minutes until soft. 2. Marinate the steak: In a small bowl, mix olive oil, red wine vinegar, paprika, oregano, garlic, salt, and pepper. Coat the steak in the marinade and let it sit for 20–25 minutes at room temperature. 3. Make the chimichurri: Finely chop parsley, coriander, garlic, and chili. Mix together with olive oil, red wine vinegar, salt, and pepper. Let it sit while the rest cooks. 4. Cook the steak: Heat a pan over medium-high heat for about 5 minutes. Sear the steak for 1–1.5 minutes per side for a pink center. Add a small knob of butter if you like and baste the steak. Remove from the pan and let it rest for 5–10 minutes. 5. Cook the greens: In the same pan, add the pre-cooked green beans. Season with a bit of garlic powder, salt, and pepper. Sauté for 3–4 minutes to soak up the flavor. 6. Plate it: Serve the sweet potato mash, steak, and green beans together. Spoon the chimichurri sauce over the steak. Optional: finish with a squeeze of lemon or a sprinkle of parmesan. 7. Enjoyyyy baby
