CREAMY CHICKEN POBLANO SOUP 8 tbsp unsalted butter 2 cups diced yellow onion 4 celery stalks, diced 3 carrots, diced 2 garlic cloves — I use frozen garlic cubes 3 poblano peppers, seeded + diced 1 1/2 tsp kosher salt 1/2 tsp black pepper 1 tsp cumin 1/4 tsp dried thyme 8 cups chicken broth 2 cups heavy cream 3 cups shredded chicken Sauté the onion, celery, carrots, garlic and poblanos in butter until softened. Add the seasonings, chicken broth and heavy cream and let everything simmer. Blend until creamy, then add the shredded chicken and let it all come together. We always eat ours with tortilla chips for dipping. Add fresh cilantro and avocado on top if you want.
