Beyond OfficialPSA: serving up a home-cooked meal is the best way to say I love you 🫶 — 📹: @Caitlin | From My Bowl 🍔TERIYAKI BURGERS (Serves 4) 8 pineapple rings (I used canned) 1/2 cup pineapple juice (from the can) 3 tablespoons soy sauce or tamari 1 1/2 tablespoons rice vinegar 1 tablespoon brown sugar 1 teaspoon minced garlic 2 teaspoons minced fresh ginger 1 tablespoon cornstarch 1 red onion, cut into 1/2” slices Oil, for brushing the grill 4 Beyond Meat IV Burgers 4 Sesame Burger Buns Lettuce, for serving 1️⃣Preheat your grill* to 400F. Add the pineapple juice, soy sauce, rice vinegar, sugar, garlic, and ginger to a small pot and bring to a simmer over medium heat. Dissolve the cornstarch with 1 tablespoon of cold water and whisk into the sauce, then simmer for an additional 1 to 2 minutes until thickened. Set ~1/4 cup of the sauce aside for topping the burgers later; the rest will be used on the grill. 2️⃣Brush the grill with oil and add the pineapple and red onion. Brush the pineapple with teriyaki sauce and grill the veggies for 3-4 minutes on each side until browned. Set aside. 3️⃣Add the Beyond Burgers to the grill and brush the tops with teriyaki sauce. Grill for 4 minutes, flip the burgers, brush with teriyaki sauce, and grill for another 4-6 minutes. Set aside. (I like to toast the buns during the final 3-4 minutes of this step) 4️⃣Assemble each burger with lettuce, the Beyond Burger, about 1 tablespoon of reserved teriyaki sauce, and the grilled pineapple and red onion. Serve warm and enjoy! *Note: If you don’t have a grill, you can use a cast iron grill pan or skillet on the stove instead over medium-high heat.
