BarflyPeking Duck took over three days in preparation. But most of that is just waiting for the skin to dry as it's hanging around. check link in my bio for a fat discount on the ThermoPro I used. But it's only through July. My spice blend l used a kinda traditional Chinese 5 spice but I couldn't get the Sichuan peppercorns. So l substituted with a mix of black peppercorns and coriander seeds. With the spice I added a dash of salt and a few tablespoons of sugar.
